tofu scramble
1 block firm or extra firm tofu
1 can black beans
1 small zucchini
1/2 green bell pepper
some diced onion
veggie oil
1 tsp turmeric
1/2 tsp coriander
salt
pepper
Drain the tofu of excess water (I usually press it between two plates with some kind of a weight on top). Mash that shit up with a fork. In a sauce pan, add that veggie oil, the onions, green peppers, and zucchini. Sauté until it's a bit soft. Add coriander and salt. Throw in the mashed tofu, stir. Add turmeric. Stir. Add drained black beans. Garnish with avocado, salsa, lime, and roasted rosemary potatoes.

yum. i need to start eating some tofu. i never buy it, but this might have encouraged me to do so.
