crazy vegan cat lady.


My favorite thing lately has been taco on a plate. I made myself one yesterday after work, and delighted in it. I drank a Sierra Nevada pale ale, watched The Tudors, and opened up every window. I wanted to sit outside, but the sun hits at such an angle, that I can't see my computer screen. First world problems, eh?


Do you want to make taco on a plate? Start with some black beans mixed with sautéed onion and garlic. Scoop a few spoonfuls onto your plate. Roast some potatoes! Or, if you're lazy (like me), stick a potato, wrapped in a paper towel, in the microwave for 5 minutes. Chop it up, add some to your plate. I also adorned my taco on a plate with Tofutti sour cream (uh…yum!), Publix salsa, and chopped onion and green pepper. Oh, and this time I added an egg. I think I'm going to stick with using eggs in baked goods. After not eating them for over two months, my stomach wasn't entirely used to them in their eggy form, nor were my taste buds. It's amazing how we are able to alter our tastes in such a short period of time. So, even though the backyard-raised chicken eggs didn't sit right with me, I think I'll bake some cookies with them tomorrow. Or maybe a cake… Letting things go to waste just isn't my "thing". Those vegan web forums I was talking about? People will force themselves to throw up when they find out they've accidentally consumed an animal product. Childish, and crazy.


This whole vegan thing is really becoming a lifestyle. I've said over and over again, I don't want to become one of THOSE kinds of vegans. But um, I totally subscribed to a vegan magazine. I sat outside for a little bit today (because it's gorgeous) and drank a berry/mango smoothie and read the latest issue of VegNews. There are cleanses, other cities besides Tallahassee that have vegan bakeries, bars, and breakfast joints, and shoe stores dedicated to animal-free footwear. I thought, maybe I should move to Toronto, maybe I should move to Phoenix, or NYC. But that'd be silly... to move just for the food. I even thought about making my CAT vegan. Sigh... I really need to get some of my priorities straight. Or...would that be such a bad thing? There are plenty of healthy vegan cats out there. And by buying animal by-products for my cat, I'm still contributing to the meat industry. It's one of those things that I need to think about for a little bit. I don't know if anyone can truly live without creating some harm to some animal. Pharmaceuticals, hello?
