moving, thai food, and controlling it all.

So I moved into my new place. I slept there last night and realized, geez, I need a box spring. And maybe an air purifier. Oh, and I need to get this place cleaned up. I could not wait to run out the door at 8:30am to get to work. My house is an absolute mess. Boxes everywhere. I love open spaces. I love being able to walk without stepping over things. I keep having to remind myself: it takes time, it all takes time. When I'm trying to get something done, I try to do it in a hurry. Why? What's the hurry? I don't know, but my mind is telling me, go go go! And while my body is on hyperdrive, and my mind is saying, go go go, somewhere deep within my consciousness a voice says, slow down, you're going to trip, you'll break an ankle. So not only do I have the "hurry sickness", I have anxiety and I'm trying to control my anxiety by being controlling. What the heck is wrong with me?

I'll post pictures of the new place, once I'm happy with how it looks. And once I move in my box spring from my old place, I think I'll get some better rest. And maybe I won't be so anxious.

The other night I made coconut curry with tofu for Peter. He called, saying he was hungry, and I offered to make him some. He's so busy with school, work, and coaching a sports team (which is #10 in the country by the way), I don't know where he finds time to make himself dinner. Anyways, I love cooking for him. I never thought I'd feel that way about anyone. But when he eats what I cook, and especially when he says it's yummy, it gives me the best feeling. The best part of it all though, is that he's a great cook himself. What? Yeah, I know.

The key ingredients for Thai coconut curry are Braggs Liquid Aminos, Hot Madras Curry Powder, Coconut Milk (super cheap at Publix!), firm tofu, and garlic. Use whatever vegetables you like! Sauté those veggies up, add the pressed tofu (or don't press it, whatever). Place a sauce pan on medium heat, add some olive oil, add your garlic (1 or 2 cloves, it really depends on how much you're making), a dash of red pepper flakes and your Hot Madras Curry Powder. Let that sauté until your nose is filled with sweet, sweet fragrance. Then add two tiny cans of coconut milk (or one regular sized can), two tablespoons Braggs (or soy sauce), sugar (to taste), some salt (what?! with Soy sauce? Yeah…) Bring that to a boil, to thicken. then turn down the heat a bit. Add some dry basil, or better yet, fresh basil to the mix. I cook plain ol' Publix rice on the side. Add everything together and whah la!

My friend Nathan left for China yesterday. He's been in China on and off for the past two years. He came into town for a month and he left yesterday. I've know this boy since I was twelve years old. Our families attended the same church (Unitarian Universalist Church of Tallahassee). I was a mother's helper for his younger sister. Anyways, he's doing great things in China, and also crazy things. And he sure is missed here, way on the other side of the world. Maybe we can all dig one giant hole in the Earth. That's how we get to China right?
