no eggs, no butter, no milk. oh my!
I've been hit with the baking bug, the cooking craze, the food frenzy. I've been holding on to a recipe for vegan Oreo cupcakes for about two weeks now. I decided two days ago I'd try it out. My friend, Nathan, is home from China for a month and he's allergic to dairy and red meat (and maybe some other things but he can't really figure it out). And my friend, Chase, well, it was his 25th birthday, and you can't be cupcake-less or cake-less on your birthday. So I whipped up these treats and brought them over to Peter's house (where everyone was hanging out).
I stuck a candle in one of them and said to Chase: Happy Birthday tomorrow! And we chowed down. The icing on the first batch was WAY too "hard". The recipe also called for crushed Oreos in the icing. I'm not the most adept baker (or thinker sometimes), and I ended up putting the icing in a pastry bag and wondering why it wasn't coming out and why the pastry bag exploded. Oh, let's see, maybe because there are bits of Oreo crushed up inside the icing? Haha.
So this morning I made these four, which I am very happy with! (There was a gas leak at my work and a mass e-mail was sent out saying, don't come in to work! )Okay, that's fine with me! So I whipped these cupcakes up, and tried out a different icing recipe. Less Earth Balance, more powdered sugar and cocoa powder. I got the fluffy texture that I was looking for. I brought these in to work and one of my co-workers just said it was the best cupcake he's ever had.
No animals were harmed in the making of these cupcakes!
There are a lot of recipes out there. I suggest finding one that uses apple cider vinegar and canola oil. I used a canola oil/coconut oil blend and a mix of vanilla and almond extract. Start the recipe by adding the apple cider vinegar to the unsweetened soy milk. LET IT CURDLE! Just let it sit there for five minutes, then add the rest of the "wet" ingredients (sugar, salt, vanilla, etc.) This will insure that your cupcakes have maximum fluffiness!
