as i promised, vegan valentines day cupcakes.

As I promised, Valentine's Day cupcakes! A bit after the fact, but hey, what can ya do. I wish the frosting was a bit fluffier. I should have learned from the second time I made my own frosting: whatever you do, don't add soymilk! Seriously. Just Earth Balance and powdered sugar. Or Earth Balance and cocoa powder. That's all you need for a light, fluffy, super sweet frosting. Is there a way to get around putting SO much powdered sugar in icing? Please share! I don't really mind the loads of Earth Balance. I've always been an oil fanatic. And oil in butter form? Even better!



Unfortunately, I couldn't getting around to eating all of them. And after about a week, these little cakes start to take a turn for the worse. They won't kill you if you eat them, but they just smell odd. C'est la vie. Given enough time, things will smell odd.

Miami was ridiculous. I didn't get to spend any time in the city, but I still felt like I was in a hurricane simulator. I worked fourteen hour days that weekend. Filming, driving, sleeping, filming, driving, sleeping. And in between it all, I still managed to see some beautiful things.


Eating vegan on the road is awful. I brought some food of my own. I had made vegan "tuna" salad spread for sandwiches and I sliced some avocado. At home it looks like this:


On the road it's stuffed into a cold pita half. I think I ate some fries and a burrito sans cheese and sour cream from Tijuana Flats. And after the weekend (TMI alert!) my bowel movements just weren't the same until I started making my kale smoothies again and eating soygurt in the mornings instead of English Muffins. Now I'm back to my normal self. Last night, my roommate Liz made the most wonderful dinner. She's a better vegan cook than me, and she's not even vegan! She cut up a spaghetti squash and roasted it in the oven topped with marinara sauce, and Daiya mozzarella shreds. Then she roasted up some beautiful beets, radishes, leeks, and other amazing veggies with garlic and rosemary from her little herb garden.

I'm moving into a new place this week! I wish I could still live with Liz, but she has a beautiful, territorial princess cat named Whitey. Peter has my cat (our cat) Edward living with him right now, but eventually he's going to have to do an internship out of town. That means I get my cute little kitty back, but I don't want to bring her into Whitey's kingdom. That would just be cruel. So I'm moving down the road into a little studio house. That's right: studio HOUSE. And Edward and I will live happily ever after. I'll post some photos soon.

  2. Yes, you are right. I'll just have to cut back on the amount of icing I use on the tops of the cupcakes. Now I want a cupcake... My new place only has a toaster oven. But it can bake small things. I'll have to try it out this weekend.

  3. Can you get one of those small counter-top convection ovens? That would be awesome.

  4. I think this toaster oven is also a convection oven. But I may just be saying things that aren't true. It has a "bake" button. And maybe a countertop convection oven has broil?
